Chocolate Marshmallow Squares

These tasty squares are a staple out here in the Maritimes. I can’t remember a church pantry table without them, and they show up at most bake sales. In our small community, it’s common to get a call asking you to bring “sandwiches or sweets” for a funeral, luncheon or other event. Chocolate Marshmallow Squares are a frequently contributed “sweet.” They aren’t fancy, but they are yummy and quick to whip up.

Peanut Butter Squares

I’ve already mentioned here that peanut butter and chocolate is one of my all-time favourite food combinations. I salivate over lists of decadent desserts like this one (Buzzfeed is another of my obsessions) but am just as happy with some chocolate chips sprinkled on a spoonful of PB. These simple squares have been one of my favourite treats since childhood. My mom made them frequently while I was growing up and my brother and I both adore them.

If you’re still looking for a quick, simple dessert for Mother’s Day, these peanut butter squares are perfect. Especially if your mom loves peanut butter and chocolate like mine does!

Apple Streusel Bars

Apple Streusel Bars by the Bluenose Baker

As I’m sure you can tell by looking at my recipe index, I love chocolate. However, we do not have an exclusive relationship. I can be easily persuaded to leave the chocolate desserts alone if I’m given an apple cinnamon option. This is unlike some people in my life who believe dessert is not dessert unless it involves chocolate!

These bars remind me of one of my all-time favorite desserts – apple pie with apple crisp topping. They are quicker to make than pie and can be eaten with your hands, which makes them perfect for a dessert tray. These Apple Crisp Bars would be a perfect addition to a Mother’s Day brunch or lunch menu.

Double Chocolate Brownies

Welcome to the Bluenose Baker! I’m Laura, and I’m excited to share some of my favourite recipes with you, both decadent treats and healthy meals. This recipe certainly falls into the treat category!

As a kid, brownies were the very first thing I learned to bake by myself. I started out using a mix, but progressed to making them from scratch when I discovered this simple recipe.

Double Chocolate Brownies became my “go-to” recipe when I needed to take a dish anywhere. Swim team banquet? Class potluck? I brought brownies. These brownies were the centerpiece of girls’ nights in university, where we often ate them straight out of the pan with forks!

These days I have a few more recipes in my repertoire, but I still love to whip up a pan of brownies to share. I made these to keep myself occupied on one of our many snow days this winter, earning them the title “bored brownies” from the co-workers I shared them with!
