Almond Butter Quesadilla (Hug A Fat Month)

Almond butter is my latest obsession. Peanut butter still has a special place in my heart, but these days it’s all about almond butter. I put it on English Muffins, rice cakes, pancakes, waffles, apple slices, even in oatmeal. This quesadilla features almond butter along with some of its best flavour friends: bananas, strawberries and chocolate. It’s great for breakfast, lunch, a snack or dessert!

I love all of the healthy dessert ideas on Katie’s blog, and this month she’s encouraging readers to embrace the healthy fats in their diets. Literally to hug them! Here I am with my love, almond butter!

Quesadillas have recently become one of my favourite foods. Chicken, veggie, breakfast, even pizza-dillas happen pretty frequently around here. Quesadillas have always been my mom’s go-to order at a restaurant, and I recently told her that I finally get the appeal! I decided to branch out and make a sweet version.

These quesadillas are super quick and easy. They taste like a treat but are actually pretty good for you. Healthy fat and protein from the almond butter, complex carbs from the fruit and whole grain tortilla – a pretty well rounded snack!

You’ll need a large tortilla (I like Dempster’s Ancient Grains), bananas or strawberries (or both), mini chocolate chips, and the star ingredient – almond butter!

Slice up the fruit. I like a combination of bananas and strawberries, but you can pick one or the other. If you use strawberries, pat them dry with a paper towel.

Spread the almond butter on one half of the tortilla. You can put it on both sides if you want more almondy deliciousness.

Place the sliced fruit in an even layer on top of the almond butter.

Sprinkle on the chocolate chips.

Fold the other side of the tortilla over the filling.

Heat a large skillet over medium heat. Give it a spritz of non-stick spray and slide the quesadilla in.

Cook the quesadilla for about 3 minutes on each side, until the tortilla is golden brown and getting crisp, and the chocolate is melted. Flip it carefully – you don’t want to lose all the filling!

Remove the quesadilla from the pan and use a knife or pizza cutter to slice it into wedges.

Serves one as a meal, two as a snack or dessert.

Almond Butter Quesadilla

  • Servings: 1 - 2

Ingredients:

  • 1 large tortilla
  • 1 – 2 tablespoons almond butter
  • 1 small banana or 4 large strawberries, sliced (or a combination)
  • 2 teaspoons mini chocolate chips

Directions:

Spread the almond butter on one or both halves of the tortilla.

Place the sliced fruit in an even layer on top of the almond butter.
